Smashed GEM® Avocado and Smoked Salmon

Smashed GEM® Avocado and Smoked Salmon

ingredients

  • 1 ripe GEM® avocado, peeled, pitted
  • Juice of 1 ½ lemons (about 3 tbsp)
  • Salt and pepper
  • ¼ of a small red onion, thinly sliced
  • A pinch of sugar
  • 2 slices of toast
  • 100g smoked salmon
  • 2tsp capers

METHOD

Add the avocado, 2tbsp of lemon juice and some salt and pepper to a bowl and roughly mix and smash with a fork.

Toss the onion slices with the rest of lemon juice, some salt and the sugar, leave for a few mins.

Spread the smashed avo on the toast, top with the smoked salmon, onions and capers and a little more black pepper.
