4 slices sourdough
1 x Gem® Avocado
200g cherry tomatoes on the vine
1 red pepper, deseeded and sliced
2 tsp balsamic vinegar
125g reduced fat halloumi
1/2 tsp Zatar
Juice of half a lemon
1 tbsp olive oil
Salt to taste, 3 grinds of pepper
8 basil leaves, cut into strips
Lay the peppers and tomatoes on a lined baking tray. Drizzle over the balsamic vinegar, ½ tbsp of the olive oil and season with a pinch of salt and pepper. Roast in an oven at 160 fan for 25 minutes.
Cut the halloumi into small cubes, or slice it. Add 1/2 tbsp olive oil to a hot griddle or frying pan. Cook the halloumi for 2-3 minutes until coloured.
Toast the sourdough.
Mash or slice the avocado adding a pinch of salt and the lemon juice.
Top the sourdough with the avocado, then the peppers, tomatoes, halloumi and finish with a sprinkle of the Zatar and fresh basil.
