100 g wholegrain rice
1 GEM@ avocado
80 g red cabbage, shredded
80 g edamame beans
¼ cucumber, peeled into strips
1 carrot, peeled into strips
2 spring onions, sliced
2 radish, sliced
1 red chilli, sliced
Coriander leaves, to decorate
1. Preheat oven to 220 C/200 C fan
2. Cook rice according to pack instructions, drain, place in a bowl, stir in 1 tbsp of lime dressing and season with black pepper.
3. Arrange rice and raw vegetables in a bowl. Drizzle over the dressing and add the chilli and herbs.
Lime & Ginger Dressing
5ml lime juice
5ml rice vinegar
5ml miri
25ml olive oil
½ tsp grated ginger
¼ garlic clove, crushed
1 pinch black pepper
1 lime leaf, cut into thin strips (optional)
Place all the ingredients in a jar and shake until emulsified.
