Burrata with Marinated GEM® Avocado, Sage and Crostini

An indulgent twist on avocado on toast, this delicious recipe combines burrata and GEM® to create a mouth-watering dish that is perfect for brunch or lunch.

Burrata with Marinated GEM® Avocado, Sage and Crostini

Ingredients

  • 2 GEM® avocados, peeled, stone removed and diced
  • Pack of 2 part-baked baguettes, cut into 2cm diagonal slices
  • 5 tbsp avocado oil
  • 1 garlic clove, crushed
  • Juice 1 lemon
  • ½ tsp smoked paprika, plus extra to garnish
  • Fresh sage sprigs
  • 150g burrata or mozzarella cheese

Method

  1. Preheat the oven to 180°C/160°C/gas mark 4.
  2. Make the crostini: Place the baguette slices on a baking tray. Brush with 2 tbsp of the avocado oil and sprinkle with sea salt. Bake in the oven for about 12 minutes until golden brown and crispy. Remove from the oven and leave to cool.
  3. Mix the garlic, lemon juice and smoked paprika with 2 tbsp of avocado oil in a medium-sized bowl. Season with salt to taste. Add the diced GEM® avocado and toss gently to coat in the mixture.
  4. Heat the remaining oil in a frying pan over a medium-high heat. Add the sage leaves and fry for 1 minute until just crispy. Don’t let them get too dark.
  5. Place the burrata on a serving platter. Add the avocado (spoon any remaining oil over the burrata). Top with the crispy sage leaves, add a sprinkle of smoked paprika and serve with the crostini.
